The Easiest, Most Delicious (healthy) Potato Recipe
the best fries, better than fried!!!!
use any kind of root veg!
(made this 4 times last week in class)
6-7 potatoes (use less for large sweet potatoes, parsnips, rutabaga or celeriac are also delicious)
~1/3 cup olive oil or coconut oil (enough to drizzle over the top)
Salt and Pepper
1 cup parmesan cheese and 1 cup romano cheese
3 TBS freshly chopped rosemary, can use other fresh herbs as well
3 TBS freshly chopped parsley
2 TBS chopped garlic
Preheat oven to 425 degrees.
Line a large baking sheet with parchment paper - you may need more than one if you're using a lot of vegetables. Chop the potatoes/vegetables into fry-size or home fry size. Make sure to roughly cut them all to the same thickness and size so that they cook at the same rate. (Thinner will be crispier) Spread the vegetables evenly and thinly on the baking sheet, make sure to space them out so that they crisp up and cook evenly.
Drizzle the olive oil over the top or chunk the coconut oil out over the pan. Note: I don't bother to melt out the coconut oil or toss the potatoes in oil. As they cook, the oil will spread out evenly and crisp them up.
Sprinkle with the additional toppings, can choose any or all (more is better?!) When I do these for a week night, I will just do sweet potato home fries with just coconut oil and that's it. They are super sweet, almost candy like! And yes, I do share with Sperry...
Into the oven they go, check them at 20-25 minutes. They should be browning nicely. You can then turn them down to 400 degrees to finish crisping them up. Should be done after 30-45 minutes total, depending upon your oven and the size of the fries.
