Roasted Brussel Sprouts
So simple, prepare ingredients, toss and roast. You will definitely be seeing this on my Thanksgiving table this year!
Note: this recipe is easily doubled, tripled, etc to accommodate crowds - just multiply amounts
1 lb brussel sprouts
1 tbs coconut oil (can use olive oil)
2 strips bacon, chopped
1 tsp sea salt
1/2 fresh ground pepper
2 cloves sliced garlic
2 tbs pinenuts
1/2 lemon, zest and juice
Optional: garnish with 3 tbs basil and gruyere or parmesan cheese
To prepare the brussel sprouts I just cut off the bottoms, where it's brown and dry, then slice in half, length-wise.
Toss these in a bowl with the chopped raw bacon, coconut oil, sea salt, pepper.
Place on a baking sheet (I line mine with aluminum foil). Roast 10 min.
Remove, sprinkle with the pinenuts, garlic, rosemary, and lemon zest. Move around the brussel sprouts to allow them to evenly brown and incorporate all of the added ingredients. Roast 10 more minutes.
Test one for doneness. When tender in the middle remove, sprinkle with lemon juice and optional garnishes, serve, enjoy!
